At the School Kitchen, you can enjoy freshly baked sourdough bread, homemade cakes, quality coffee, and a daily menu featuring local specialties and seasonal salads. You’re welcome to dine in the cozy café setting – housed in a former classroom – or outside in the schoolyard. Takeaway is also available.

Q&A with Chef Nicolai
Nicolai Madsen is the chef in Skolekøkkenet (the School Kitchen). He believes in intelligent cooking. He dreams of baking bread with bean flour and envisions a world where we grow more of our own food instead of buying it at the supermarket.
Since October 2023, he has been in charge of catering for course participants, groups, and guests at Skolekøkkenet – all while maintaining the idea of the kitchen as a place for learning.
Q: What kind of food do you make – and why?
A: We build sustainability into our food. It has to make sense. Intelligent cooking today aligns with the world we live in.
Q: What do you love most about working in the kitchen?
A: Baking bread. I’m considering experimenting with bean flour, because we need to use more legumes. You can’t revolutionize everything in one day, but when you cook for many people at once, you actually have the chance to make a difference.
Q: Why are local – and often wild – ingredients so important in your cooking?
A: We work hard every day just to afford shopping at the supermarket. But in principle, we could work a little less if we grew or foraged some of our own food instead. It’s exciting, it tastes better, and it’s great to be out in nature.


At Tversted School, we grow our own vegetables, fruits, and herbs. A large tunnel greenhouse is on the way, so we can grow even more ourselves. It’s all about using what’s right outside the door – because it makes sense, and because we want to take care of what we have.
